Food pairing: With such high acidity and subtle saline notes, this is a great choice to match alongside spicy, aromatic foods. Southeastern Asian dishes play well, such as Thai dishes and curries.
That being said, the wine is made in Sicily, so you'd be remiss not to try it with herbed and breaded stuffed sardines, arancine di riso ripiene di formaggio (cheese-stuffed rice balls), and eggplant cutlets.
"Expressive and robust, showing powerful elegance and great textural appeal, this is a Carricante that balances classicism and modernity. Green apple, quince, and white grapefruit at the core with an elegant top layer of lemon balm, white roses and linden. Very long on the palate with focus and a delicious chalky grip that makes it linger on the palate. Lingering notes of grapefruit pith, preserved lemon and pear peel." Decanter
Grapes have been grown on the flanks of Mount Etna in Sicily probably ever since the first agricultural civilizations set foot on the island, which were certainly no later than the 8th century B.C. As evidenced by seals found on the clay storage vessels called amphorae which litter the ancient shipwrecks on the floor of the Mediterranean, Sicilian viticulture was extremely prosperous by the 2nd century B.C. and many Sicilian grape varieties were exported to the mainland of Italy where they became the basis for thriving winegrowing operations in cities like Pompeii and Etruria.
