DOMAINE DE LA BORIE BLANCHE
At the heart of the AOP Minervois and Livinière, visit an essential area of the wine route.

Vast south-facing amphitheater, backed by the Montagne Noire, the Minervois is under the dominant influence of the Mediterranean. Culminating at 400 meters, in the heart of the Minervois appellation, the AOP la Livinière is a rare terroir made up of limestone and schist. The tasting of the estate’s great wines evokes a mineral setting, between the low walls where you sometimes discover a small dry stone hut, like a black opening on these white pebble walls. It is a ‘borie’, which gave its name to the domain.

Tasting notes: Intense garnet colour. Spiced and mentholated fragrance on the nose. Aromas of dark, fresh fruit (blackberry, plum). Intense in mouth. Depth, substance and volume. Balanced by a finale of prune and cacao.

GRAPES VARIETIES: 60% Syrah, 30% Grenache, 10% Mourvèdre
TERROIR: Backed by the steep slopes of the Causse, bordered on the West by the Serre d’Oupia, the terroir is made of schist, influenced by Mediterranean temperatures and cooled by mountain breezes. The altitude terroirs are situated at 350m above sea level.
WINE MAKING: Hand-picked from high-lying vineyards. Maceration with gentle interventions to preserve the tannins and the quality of the fruit. Partial aging in new barrels.
