The Populis Wabi-Sabi Red Blend was born from the desire to create a lighthearted, naturally made, extremely drinkable wine from exciting vineyard sites throughout California. Populis partners with organic farmers who work with quality in mind, many of whom dry farm historic, old vine vineyards. Served Chilled

Winemaker Notes: "Our annual Fall red blend, this year's iteration is mainly Carignane and Zinfandel, along with a dash of Pinot Noir and Chenin Blanc. As a point of reference, this year's Wabi-Sabi is heavier than the Reversee, and well suited for the winter season."

Vineyard Notes: Containing a mixture of sandstone, shale, and quartz, the deep soils of Mendocino were formed from alluvial flows, depositing fist-sized stones along the way. Highly deficient in organic matter, the moderately acidic soil pH allows for optimal nutrient uptake to allow the vines to thrive. The vines range in age from 20 to 70 years and are farmed organically by 3rd and 4th generation farmers.

Vinification Notes: Each component of this blend was made with the intention of creating a dynamic blend meant to enhance the character of each individual variety. Partial whole cluster for structure and tannin, partially destemmed for mid-palate depth, some rose for brightness and lift; this wine has a bit of everything. The fermentation, including malolactic, occurs with native yeast. The wine is bottled without fining or filtering. SO2 is 10-20 ppm total.
