Vinification - Maturation
A de-stemmed harvesting process. Direct pressing. Traditional white vinification. The alcoholic fermentation is halted by «Mutage» on must. Partly matured in concrete vats then in casks and barrels. A blend of wines the youngest of which is aged for 20 years.
Drink as an apéritif, with cheese, walnut cake, Catalan cream. Serve at 15°C/59°F
Born in the 13th century, Arnau de Vilanova (pictured above) was a Catalan physician who taught at the University of Montpellier and served as personal physician to the kings and queens residing in Barcelona and Perpignan. He developed numerous herbal, alcohol, and wine-based remedies that were used for centuries.
He was the one who conceived the recipe for an original wine with a delicious taste, which the winemakers of Roussillon improved and refined over time, resulting in the naturally sweet wines that made their reputation.
It is to pay tribute to him that, for the past 30 years, we have marketed our wines under his name.
