Hand harvest, hand sorted, majority de-stemmed, 5% whole bunch. Fermented in stainless open top tanks. Gentle pump-overs only. Full MLF. Racking once into barrel. No maceration. No fining, no wood chips, no staves. Aged 18 months in French and American Oak barrels. Food pairings: Burgers, grilled portobello mushrooms, smoked chicken or a charcuterie plate.
