Food pairings: Duck breast, guinea fowl and partridge.
Winemaking: Hand-picked fruit is partly destemmed and cold-macerated before fermentation in small stainless-steel vats. Ageing lasts 18 months in French oak, including 25% new barrels.
Vineyards and terroir: Chanson's Clos du Roi lies below Les Marconnets in Beaune, with southeast exposure and soils of silt, clay and sand. This is Beaune Clos du Roi, not Faiveley's Mercurey Le Clos du Roy.
Family and history: The former vineyard of Burgundy's dukes became royal property under Louis XI; Chanson farms its own parcels within the climat.
