Close100% Pinot Noir
Food pairings: Roast chicken or guinea fowl, veal, duck, mushroom dishes and soft cheeses such as Brillat-Savarin.
Winemaking: Harvested by hand into small 25 kg cases, the grapes are sorted, destemmed without crushing and moved into stainless steel tanks by gravity. Fermentation with natural yeasts is gentle, with moderate punch-downs and a long vatting of 20 to 25 days. The wine ages on its lees in a cold cellar in 500-litre barrels, 30 to 40% new, is racked by gravity a month before bottling, and is neither fined nor filtered.
Vineyards and terroir: A blend of three plots in Volnay on deep clay-silt soils from the alluvial hillsides.
Family and history: Domaine Chantal Lescure, based in Nuits-Saint-Georges, farms vineyards from Meursault to Vougeot and has been certified organic since 2009. After more than 30 years with the Machard de Gramont family, the estate is now run by Burgundy entrepreneur Jean-Philippe Girard, in partnership with Éric Rousseau of Domaine Armand Rousseau in Gevrey-Chambertin and with longtime cellar master François Chavériat.
