The grapes undergo a long, gentle pressing to obtain as clear a juice as possible. Alcoholic fermentation takes place in vats and 5% new barrels and lasts 15-20 days. The wines age on their lees until the completion of malo-lactic fermentation. They are blended in the summer following the harvest and undergo a light filtration before being bottled in August.
