Food pairings: Grilled ribeye or strip steak, roasted lamb, braised short ribs, hard aged cheeses and dishes with savory herbs and cracked black pepper.
Winemaking: Estate Red Mountain fruit from Hedges, Bel' Villa, Les Gosses and Jolet was destemmed and partially crushed into stainless-steel fermenters, pumped over twice daily, then pressed to barrel for malolactic fermentation. The wine aged entirely in barrel, 43% new oak (70% French, 28% American, 2% Hungarian), and was bottled unfiltered after wild-yeast fermentation.
Vineyards and terroir: Grapes come from estate Red Mountain AVA vineyards within a two-mile radius of the winery. Red Mountain's desert slopes and rocky soils give Cabernet structure, savory herbs and lasting freshness. The estate has been certified biodynamic since the 2021 vintage.
Family and history: Tom and Anne-Marie Hedges founded Hedges Family Estate on Red Mountain in 1987, building one of Washington's landmark family châteaux. Daughter Sarah Hedges Goedhart is winemaker; the family still farms and bottles from this hillside estate.
