Food pairings: Grilled white fish, roast poultry, veal, goat cheese and aged Comté.
Winemaking: The producer describes hand harvesting into small boxes, gentle pressing and fermentation in oak barrels from the house cooperage, with one-third new barrels. The wine usually spends about 15 months on fine lees before bottling.
Vineyards and terroir: Les Chaniots lies on the lower slopes of the Montagny hillside, facing southeast. Its name comes from an old term for oak trees, recalling the woodland that preceded the vines. This is a Premier Cru of the Côte Chalonnaise.
Family and history: Founded in Beaune in 1859 by Louis Henry Denis Jadot, Maison Louis Jadot brings together estate vineyards and a long tradition of working with Burgundy’s growers. Frédéric Barnier leads the winemaking team, with an emphasis on the character of each individual terroir and a restrained use of oak.
