Food pairings: Roast chicken, grilled salmon and mushroom dishes.
Winemaking: Joseph Drouhin describes hand harvesting, destemming and fermentation with indigenous yeasts, followed by ageing in oak barrels. The approach is adjusted to the wine and vintage.
Vineyards and terroir: Côte de Beaune Rouge is a distinct appellation on the hill above Beaune; it is not the broader Côte de Beaune-Villages appellation. Shallow, chalky soils underpin its delicate Pinot Noir character.
Family and history: Joseph Drouhin's Beaune-based family house dates to 1880; Véronique Boss-Drouhin oversees its winemaking.
