Food pairings: Roast beef, lamb, game and rich mushroom dishes.
Winemaking: Hand-harvested fruit is destemmed and fermented in small open vats. Barrel ageing is guided by tasting to preserve Pommard's structure and the character of the vintage.
Vineyards and terroir: Pommard lies south of Beaune, beside Volnay, on limestone and clay soils that give its Pinot Noir a firm, distinctive structure.
