Pinot Noir
Food pairings: Roast duck, poultry with mushrooms and tender veal.
Winemaking: Hand-picked grapes are fully destemmed and fermented with indigenous yeasts in small open vats. Ageing takes 12–16 months in French oak, including 20% new barrels.
Vineyards and terroir: Volnay lies south of Beaune beside Pommard. Marl, limestone and small pebbles contribute to the wine's finesse and velvety texture.
Family and history: Founded in Beaune in 1880, Maison Joseph Drouhin remains a family wine house, with Véronique Boss-Drouhin directing winemaking.
