The longer a sherry stays in barrel - or the Solera system, if you will - the more intense, and dark it becomes. Rich and super concentrated on the palate with flavors of stone fruit, coffee, caramel, and, again, roasted nuts, this has an intensity that is amazing. The finish is persistent and making it fascinating to pair with food. Try it with a Cantonese-style whole fish, grilled and drizzled with ginger, scallion and sesame oil or if your adventurous something a little richer. Serve at room temperature as an aperitif. Great with cheese, too!
