100% Pinot Noir

Food pairings: The domaine suggests veal kidneys in mustard sauce (rognons de veau à la dijonnaise); also roast beef, game birds and aged cheeses. Serve at about 16°C.

Winemaking: Hand-harvested and sorted on a table, the grapes are fully destemmed and fermented with natural yeasts in open fermenters under temperature control, with about 18 days of vatting. A vertical press gives silky tannins. The wine ages for 18 months in oak barrels, 30% of them new, and completes its malolactic fermentation.

Vineyards and terroir: Les Champs Martins is a Mercurey Premier Cru facing southwest at about 275 metres. The vines, planted in 1973, grow on clay-limestone and marl with gravel and limestone pebbles on the surface.

Family and history: Founded in Mercurey in 1928, Domaine Michel Juillot is run by Laurent Juillot, the fourth generation of a family present in Mercurey since the 14th century. Laurent has refined the family style with a vertical press, used since 2007, gravity-fed vatting and work on the native yeasts of each parcel.
