Food pairings: Roast chicken, creamy pasta, scallops or lobster, soft-ripened cheeses, and dishes with toasted nuts or brown butter.
Winemaking: Barrel-fermented, then aged 12 months in a mix of second- and third-fill French oak barrels. Racked to stainless steel for about six months before bottling.
Vineyards and terroir: Old-vine Chardonnay grown on limestone in Burgundy for Pascal Roblet's Nerthus line. The domaine farms biodynamically, with high density planting and low yields.
Family and history: Nerthus is the white-wine label of Pascal Roblet of Domaine Roblet-Monnot (Volnay). Roblet has led the family domaine since 1990 and converted to biodynamics in 1997; wines are raised in his cellar at Bligny-lès-Beaune. The Vieilles Vignes bottling is labeled simply Nerthus Bourgogne Vieilles Vignes Chardonnay.
