100% Cabernet Sauvignon

Food pairings: Grilled meats, olives, hard cheeses, roasted lamb and dishes with cedar or cherry accents.

Winemaking: This AERIALS Series Cabernet is a single-vineyard, single-clone wine: Clone 8 Cabernet Sauvignon from Heart of the Hill Vineyard, aged 24 months in French oak barrels, 75% new. AERIALS wines are unblended, unfined and unfiltered.

Vineyards and terroir: Heart of the Hill Vineyard sits in the Red Mountain AVA of Washington, known for hot days, cool nights and sand-and-loam soils that yield intense, structured Cabernet. The planting used for this wine dates to 2007; with age it has produced elegantly powerful fruit. Red Mountain was Revelry's first AERIALS source.

Family and history: Jared Burns founded Revelry Vintners in 2005 in Walla Walla, aiming to bottle Columbia Valley wines that over-deliver. The range now spans the single-vineyard AERIALS Series and a Columbia Valley Collection; the wines are made in their Walla Walla cellars with a house style of balance, moderate structure and dynamic flavor.
