Food pairings: Grilled lamb chops, herb-rubbed roasted meats and smoky, spice-rubbed barbecue.
Winemaking: Destemmed and partially crushed into stainless-steel fermenters, fermented with indigenous yeast and pumped over twice daily. Pressed to barrel for indigenous malolactic fermentation, then aged entirely in barrel—50% new oak (60% French, 37% American, 3% Hungarian). Winemaker Sarah Goedhart.
Vineyards and terroir: Estate fruit from Red Mountain AVA vineyards within about two miles of the chateau: Hedges, Bel' Villa, Jolet and Les Gosses (about 40% / 29% / 28% / 3%). Hot days, cool nights and the mountain's sand-and-loam soils give intense, structured reds. Certified organic / biodynamic estate farming.
Family and history: Tom and Anne-Marie Hedges founded the estate on Red Mountain; today the family continues with Christophe Hedges and winemaker Sarah Goedhart. The Family Estate Red is their flagship Red Mountain blend from estate vineyards around the chateau.
