Passetoutgrains, a French term meaning "all the berries go through," reflects the traditional
Burgundian blend of Gamay and Pinot Noir. This expression is highly aromatic, full of bright
red fruits, delicate spices, and subtle mineral edge to create an easy drinking, extremely
food friendly wine meant for any occasion.
VINIFICATION
Grapes were hand-picked and brought directly to the winery in 1/2-ton totes. They
were hand sorted on a shaker table and 100% destemmed into 2-ton open top, stainless
steel fermenters. After 12 days on skins, they were pressed into stainless steel tank for
aging until bottling to preserve its bright, fruit-forward characteristics. Aged in tank for 8
months before bottling.
